The 2019 Cuvée du Noyer is 100% Semillon from the Texas High Plains. This old vine Semillon, made from vines estimated to be 40 years old, was fermented in neutral French oak, then aged on its lees for 9 months in barrels for added complexity. This gives the wine a lovely golden hue, reminiscent of pale straw, and also softens the acidity and creates a creamy, coating mouthfeel. The refreshing palate displays notes of wild green strawberries and dried apricot at the start, then finishes with touches of green apple and dried ginger. It has a delightful perfume of chive flower and wet straw, along with hints of beeswax, fresh ground fennel, and wet stone.
